How To Make Kaya

Here I am stuck in Melbourne. Without kaya. I know you can go to the Asian grocery store and buy it in the form of 'Coconut Jam' but I didn't think much of the ones I tried. Which was why I set out to make it myself to satisfy my craving.

Making kaya isn't all that hard... it just takes tons of time and patience. Basically you just get equal amounts of coconut milk, sugar and eggs...whisk them together at high speed and put it into a double boiler. And stir. And stir and stir and stir and stir. I can't stress stirring and double boiling enough. Until it starts looking like kaya. Took me an hour to do it today.

My arm aches but my stomach is contented.

Umm...what does double boil mean?

Well, double boiling can be done in two ways - either with a double boiler or with a pot of water boiling and a stainless steel bowl put over the hot water so that the heat that gets into the kaya is not direct from the flame - resulting in a more even and moderate heating. This is to prevent lumps/burns in the kaya.
